Salmon with Pineapple Salsa

Glaze Ingredients
  • 1/2 cup frozen pineapple juice concentrate, thawed
  • 1/4 cup water
  • 2tablespoons reduced-sodium soy sauce
  • 2teaspoons packed brown sugar
  • 2 teaspoons cornstarch
  • 2 teaspoons toasted sesame oil
  • 1/4 teaspoon crushed red pepper
  • 1/2teaspoon cracked black pepper
 


Salsa Ingredients

  • 2 cup chopped fresh pineapple
  • 1/2 cup tablespoons finely chopped red onion
  • 4 tablespoons chopped cilantro
  • 2 tablespoons rice vinegar
  • 1/4 teaspoon ground red pepper

Cover a grill safe pan with foil and cover with a light coat of canola oil. Make a bed of salsa in the pan and place the salmon on top. Glaze the salmon as needed. Grill (or broil 4 inches from heat) for 10 to 12 minutes. Use remaining glaze as desired before serving.
