ingrediants
- 4 chicken breasts
- salt/pepper
- 1pkg angel hair pasta
- 5Tbs capers
- 2 cans artichoke hearts (we used progresso)
- 1/2 Tbs crushed red pepper (add more for a kick)
- 1/2 red onion chopped
- 1Tbs garlic powder
- 2 sticks butter
- parmesan (to taste)
Directions
- cut the chicken up into slices and cook in a large skillet (season with salt and pepper to taste)
- saute the onions with the cooked chicken
- cook pasta al dente
- melt the butter with the onions and chicken
- add in the capers, artichoke hearts, garlic, red pepper
- heat over medium until thoroughly heated through
- pour over pasta and garnish with parmesan
(meal also works well with shrimp or without the chicken for a vegitarian version)
