Fire Charred Green Beens with Vinaigrette

Main ingredients
- 1-2 lbs fresh green beens
- Canola oil
For vinaigrette
- 1 egg
- 1 tsp anchovy paste
- 2 Crushed garlic cloves
- 1 tbsp Dijon mustard
- 1/2 tsp Tobasco sauce
- 1 tsp Worcestershire sauce
- 3 tbsp red wine vinegar
- 2 tbsp lemon juice
- Extra virgin olive oil (as needed)
- Fresh ground black pepper
- Parmesian cheese (as desired)
- Place beens in a bowl and coat lightly and evenly with canola oil
- In a nonreactive bowl and using a whisk, mix anchovy paste, garlic cloves, Dijon mustard, Tobasco, Worcestershire sauce, red wine vinegar and lemon juice.
- Gently add olive oil as you continue to stir until all the ingredients emulsify.
- Add the salt and pepper as desired.
- Keep covered and cold until serving.
- Preheat grill to high.
- Place the beens at 90 degree angle to the grates (Or use a vegetable basket).
- The beens will brown quickly and the oil will cause flare ups, so use tongs to move the beens around often as they cook.
- When the beens are lightly charred, remove to platter and drizzle with vinaigrette immediately before serving.
- Top with parmesian cheese.
