Fire Charred Green Beens with Vinaigrette

Main ingredients

  • 1-2 lbs fresh green beens
  • Canola oil

For vinaigrette

  • 1 egg
  • 1 tsp anchovy paste
  • 2 Crushed garlic cloves
  • 1 tbsp Dijon mustard
  • 1/2 tsp Tobasco sauce
  • 1 tsp Worcestershire sauce
  • 3 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • Extra virgin olive oil (as needed)
  • Fresh ground black pepper
  • Parmesian cheese (as desired)
  1. Place beens in a bowl and coat lightly and evenly with canola oil
  2. In a nonreactive bowl and using a whisk, mix anchovy paste, garlic cloves, Dijon mustard, Tobasco, Worcestershire sauce, red wine vinegar and lemon juice.
  3. Gently add olive oil as you continue to stir until all the ingredients emulsify.
  4. Add the salt and pepper as desired.
  5. Keep covered and cold until serving.
  6. Preheat grill to high.
  7. Place the beens at 90 degree angle to the grates (Or use a vegetable basket).
  8. The beens will brown quickly and the oil will cause flare ups, so use tongs to move the beens around often as they cook.
  9. When the beens are lightly charred, remove to platter and drizzle with vinaigrette immediately before serving.
  10. Top with parmesian cheese.
